I did something last week that I don’t usually do. I made up a recipe of my own. Gasp!! If you read my About section, you will realize that this is a rare occurance indeed. Luckily, I was using pesto as my base and pesto is one of those lovely things that you can tweak and no matter what you do, it generally turns out well.
I had some basic, but yummy ingredients in my fridge and so I decided to throw them together and see what happened. I was so pleased with the result that I think this is going to replace my normal pesto recipe for good! The great thing is it is super easy and takes, literally, 5 minutes to make (minus the time it takes to make your pasta).
So here you go, a Gullible Gourmet original:
Creamy Pesto Rosé Sauce
1/2 cup prepared pesto
3/4 cup tomato sauce
1/3 cup heavy cream
1/3 cup dry white wine
1-2 gloves of garlic (I didnt find my pesto to be garlic-y enough)
Crushed ground pepper
Throw all the ingredients together in a small sauce pan and let them simmer for 5 minutes. Pour over prepared pasta. Add parmesan and black olives if desired. That’s it! Together with some garlic bread and a nice salad, it tastes like something you would get in a restaurant. At least, that is what my dear husband told me 😉 True or not, it was a nice compliment.
